  • 2 tablespoons (30ml) vegetable oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon (15g) grated ginger
  • 1-2 chili peppers, finely chopped (adjust according to spice preference)
  • 2 sweet potatoes, peeled and diced
  • 4 cups (950ml) vegetable broth
  • 1 bunch of collard greens, stems removed and leaves chopped
  • Salt and pepper to taste
  • Optional toppings: chopped peanuts, fresh cilantro

Preparation
