1.In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until translucent.

3.Add the meat to the pot and brown it on all sides.

4.Stir in the diced tomatoes, tomato paste, Njangsa spice, Selim pepper, paprika, thyme, bay leaves, and season with salt and pepper.

5.Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the meat is tender.

6.Add the sliced plantains to the pot and continue to simmer for an additional 15-20 minutes, until the plantains are soft and cooked through.

7.Adjust the seasoning if needed and remove the bay leaves before serving.
