Preparation

1.In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3.Gradually add the flour to the mixture and mix until a dough forms. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

5.On a lightly floured surface, roll out the chilled dough to a thickness of about 1/4 inch.

6.Using a round cookie cutter, cut out an even number of cookies. For half of the cookies, use a smaller round cookie cutter to cut out a window in the center.
