Preparation
-
1.In a large mixing bowl, combine the flour, yeast, sugar, and salt. Make a well in the center and pour in the warm water and olive oil. Mix until a dough forms.
-
2.Transfer the dough to a floured surface and knead for about 5 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
-
3.Preheat the oven to 220°C (425°F). Punch down the dough and roll it out into a thin circle on a floured surface.
-
4.Transfer the rolled-out dough to a baking sheet or pizza stone. Spread the mustard evenly over the dough.
-
5.Arrange the smoked ham, caramelized onions, and grated Emmental cheese on top of the mustard.
-
6.Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
-
7.Remove from the oven and garnish with fresh parsley. Slice and serve hot.
Treat your ingredients with care...
- Smoked ham — Choose a high-quality smoked ham for the best flavor. If you prefer a milder taste, you can use regular cooked ham instead.
- Emmental cheese — Make sure to grate the Emmental cheese just before using it to prevent it from drying out. If Emmental is not available, you can substitute it with Gruyère or Swiss cheese.
Tips & Tricks
- For a crispier crust, preheat your baking sheet or pizza stone in the oven before placing the rolled-out dough on it.
- Experiment with different toppings such as sautéed mushrooms, roasted peppers, or Austrian sausage to add your own twist to the Pizza Viennese.
- If you prefer a spicier flavor, you can use Dijon mustard instead of regular mustard.
Serving advice
Serve the Pizza Viennese hot, straight from the oven. It pairs well with a fresh green salad dressed with a light vinaigrette.
Presentation advice
To enhance the presentation, sprinkle some fresh parsley over the pizza before serving. The vibrant green color will add a pop of freshness to the dish.
