The original dish typically includes potatoes, corn, and cheese, which have been replaced with traditional Caribbean ingredients such as pumpkin, meat, and aromatic spices. The use of thyme, allspice, and Scotch bonnet pepper gives the stew a unique Caribbean twist, while still maintaining the heartiness and comfort of the original dish. Treat your ingredients with care...

  • Pumpkin — Make sure to choose a pumpkin variety that is suitable for cooking, such as butternut squash or Caribbean pumpkin. The pumpkin should be peeled and cubed before adding it to the stew.

Tips & Tricks

  • For an extra kick of heat, leave the seeds in the Scotch bonnet pepper while cooking. Be cautious as Scotch bonnet peppers are very spicy, so adjust the amount according to your preference.
  • You can add additional vegetables such as carrots or okra to the stew for added flavor and nutrition.
  • Serve the stew with a side of fried plantains for a true taste of the Caribbean.
  • If you prefer a thicker stew, you can mash some of the cooked pumpkin with a fork or blend a portion of the stew before serving.
  • Leftovers can be refrigerated and enjoyed the next day, as the flavors tend to develop and intensify over time.
