However, in the Odia version, we replace the lamb with lentils and focus on using locally available vegetables and spices to infuse the dish with the distinct flavors of Odisha. Preparation

1.Heat ghee in a large pot over medium heat. Add cumin seeds and let them splutter.

2.Add chopped onions and sauté until golden brown.

3.Add tomatoes and cook until they turn soft and mushy.

4.Add diced potatoes, carrots, and cauliflower florets. Stir well.

5.Drain the soaked lentils and add them to the pot. Mix everything together.

6.Add turmeric powder, coriander powder, red chili powder, and salt. Stir to coat the vegetables and lentils with the spices.

7.Pour enough water to cover the ingredients and bring the mixture to a boil.

8.Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes or until the lentils and vegetables are cooked and tender.

9.Adjust the consistency by adding more water if needed.

10.Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
