Ingredients
In the original Slovenian Matevž, potatoes and beans are the main ingredients, while this Arab-inspired version replaces the potatoes with chickpeas. The spices used in the Arab version, such as cumin, coriander, and turmeric, give it a distinct flavor profile different from the original dish. Additionally, the saffron-infused oil adds a touch of luxury and visual appeal to the dish. We alse have the original recipe for Matevž, so you can check it out.

Treat your ingredients with care...
- Chickpeas — If using canned chickpeas, make sure to drain and rinse them thoroughly before using. If using dried chickpeas, soak them overnight and cook until tender before mashing.
- Saffron threads — To enhance the flavor and color, soak the saffron threads in a tablespoon of warm water for a few minutes before adding them to the oil.
Tips & Tricks
- For an extra creamy texture, add a splash of plant-based milk or vegetable broth while mashing the chickpeas.
- Adjust the spices according to your taste preferences. You can increase or decrease the amount of cumin, coriander, and cayenne pepper to suit your desired level of spiciness.
- Serve the mashed chickpeas with warm pita bread or Arabic flatbread for a complete meal.
- Garnish with fresh herbs such as parsley or cilantro for added freshness and color.
- Leftovers can be refrigerated and enjoyed the next day. Simply reheat gently on the stovetop or in the microwave.
