1.In a large bowl, combine the pork shoulder, minced garlic, caraway seeds, paprika, thyme, rosemary, salt, and pepper. Mix well to ensure the meat is evenly coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

2.Preheat the oven to 180°C (350°F).

3.Heat the vegetable oil in a large oven-safe skillet or Dutch oven over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally, for about 10 minutes.
