Preparation

1.In a bowl, whisk together the eggs, milk, soy sauce, and mirin until well combined.

2.Add the chopped mentaiko and green onions to the egg mixture, and gently fold them in.

3.Heat a non-stick frying pan over medium heat and add the vegetable oil.

4.Pour a thin layer of the egg mixture into the pan and tilt it to spread the mixture evenly.

5.Once the bottom is set but the top is still slightly runny, start rolling the omelette from one end to the other using a spatula or chopsticks.

6.Push the rolled omelette to one side of the pan and add another thin layer of the egg mixture. Tilt the pan to spread it evenly and let it cook until the bottom is set.

7.Roll the omelette again, this time rolling it over the previously rolled portion.

8.Repeat steps 6 and 7 until all the egg mixture is used.

9.Once the omelette is fully rolled, remove it from the pan and let it cool slightly.
