Preparation

1.In a large pot, heat the olive oil over medium heat. Add the pancetta or bacon and cook until crispy.

2.Add the onion and garlic to the pot and sauté until the onion becomes translucent.

3.Stir in the carrots, celery, and kale, and cook for a few minutes until slightly softened.

4.Add the cannellini beans, vegetable broth, crushed tomatoes, dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

5.Meanwhile, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.

6.Remove the bay leaf from the soup and add the cooked pasta. Stir well to combine.

7.Serve the Minestra Sporca hot, garnished with grated Parmesan cheese.
