1.Wash the mint leaves thoroughly and remove any tough stems.

2.In a blender or food processor, combine the mint leaves, green chilies, lime juice, jaggery, and salt. Blend until you achieve a smooth paste-like consistency.

3.Heat oil in a small pan over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.

4.Pour the tempering over the mint chutney and mix well.

5.Transfer the chutney to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

6.Serve chilled with dosas, idlis, rice, or any South Karnataka dish of your choice.
