Preparation

1.In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

2.Add the bell peppers and tomatoes to the pot, and cook for 5 minutes until they start to soften.

3.Stir in the tomato paste, cumin, paprika, turmeric, and cayenne pepper (if using). Cook for another minute to toast the spices.

4.Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

5.Stir in the kale and cook for an additional 5 minutes until wilted.

6.Remove the pot from heat and squeeze in the lemon juice. Season with salt and pepper to taste.
