1.Heat vegetable oil in a pan over medium heat.

2.Add mustard seeds and cumin seeds. Let them splutter.

3.Add grated ginger and chopped green chilies. Sauté for a minute.

4.Add turmeric powder, red chili powder, and salt. Mix well.

5.Add the peeled and segmented oranges to the pan. Stir gently.

6.Cook the mixture on low heat for about 10-15 minutes, until the oranges soften and release their juices.

7.Add jaggery or brown sugar and lemon juice. Mix until well combined.
