Preparation

  1. 1.

  2. 2.
Place the corn kernels in a blender or food processor and blend until smooth.
  3. 3.
In a large bowl, combine the corn puree, sugar, and salt. Mix well.
  4. 4.
Take a corn husk and spread a thin layer of the corn mixture onto the center of the husk.
  5. 5.
Fold the sides of the husk towards the center, enclosing the corn mixture. Tie the ends with a strip of soaked corn husk.
  6. 6.
Repeat the process with the remaining corn mixture and husks.
  7. 7.
Place the wrapped pamonhas in a steamer basket and steam for about 45 minutes to 1 hour, or until the pamonhas are firm and cooked through.
  8. 8.
Remove from the steamer and let them cool slightly before serving.

Treat your ingredients with care...

  • Corn — Use fresh corn for the best flavor and texture. If fresh corn is not available, you can use frozen corn kernels, but the taste may vary slightly.

Tips & Tricks

  • Soaking the corn husks in water helps to make them pliable and prevents them from tearing while wrapping the pamonhas.
  • Serve the pamonhas warm for the best taste and texture.
  • You can add a dollop of butter or sprinkle cinnamon on top of the pamonhas before serving for extra flavor.

Serving advice

Serve the Corn Pamonha as a delightful breakfast dish or a comforting dessert. It can be enjoyed on its own or paired with a cup of coffee or tea.

Presentation advice

Arrange the steamed pamonhas on a platter, garnished with a fresh corn husk or a sprinkle of cinnamon. The rustic appearance of the corn husks adds to the charm of the dish.
