Preparation

1.In a large pot, bring water to a boil and cook the rice noodles according to package instructions. Drain and set aside.

2.In a separate pan, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant and translucent.

3.Add the shrimp, squid, and mussels to the pan and cook until the seafood is cooked through. Remove from the pan and set aside.

4.In the same pan, add the shrimp broth, annatto oil, and fish sauce. Bring to a simmer and let it cook for 5 minutes to infuse the flavors.

5.Add the cooked rice noodles to the pan and toss until well-coated with the sauce.

6.Add the cabbage, carrots, and green beans to the pan and stir-fry for a few minutes until the vegetables are slightly tender.

7.Return the cooked seafood to the pan and toss everything together. Season with salt and pepper to taste.

8.Transfer the Pancit Malabon to a serving platter and garnish with sliced boiled eggs, crushed chicharon, and chopped scallions.
