Ingredients
In the Bahamian adaptation of the pastie, the filling remains similar to the British version, with ground beef, onions, and potatoes. However, the Bahamian version incorporates local ingredients and spices to infuse the dish with the flavors of the islands. The addition of bell peppers adds a touch of sweetness and color, while Bahamian spices such as thyme, allspice, and hot pepper sauce give the pastie its distinct Caribbean flair. Preparation

1.In a large mixing bowl, combine the flour and salt. Add the cold butter cubes and use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.
-
2.Gradually add the ice water, a little at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
-
3.In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion, bell pepper, and diced potatoes. Cook until the vegetables are tender.
-
4.Stir in the fresh thyme, allspice, hot pepper sauce, salt, and pepper. Remove from heat and let the filling cool.
-
5.Preheat vegetable oil in a deep fryer or large pot to 350°F (175°C).
-
6.On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch (3mm). Cut out circles approximately 5 inches (12cm) in diameter.
-
7.Place a spoonful of the cooled filling onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape. Press the edges together to seal the pasties.
-
8.Fry the pasties in the preheated oil until golden brown, about 4-5 minutes per side. Drain on paper towels.
-
9.Serve the Bahamian Style Pasties hot and enjoy!
