Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

2.Add the beef stew meat to the pot and brown on all sides.

3.Sprinkle the allspice, dried thyme, paprika, black pepper, and salt over the beef. Stir well to coat the meat with the spices.

4.Add the minced Scotch bonnet pepper, beef broth, and coconut milk to the pot. Stir to combine.

5.Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, or until the beef is tender.

6.Add the cubed sweet potatoes to the pot and continue to simmer for an additional 30 minutes, or until the sweet potatoes are cooked through and tender.

7.If desired, mix the cornstarch with a small amount of water to create a slurry. Stir the slurry into the stew to thicken the sauce.

8.Remove the pot from the heat and let it rest for a few minutes.
