Preparation

1.Heat the vegetable oil in a pan over medium heat.

2.Add the mustard seeds, cumin seeds, and dried red chilies. Sauté until the seeds start to crackle.

3.Add the chopped onion, garlic, and ginger. Sauté until the onion turns translucent.

4.Add the roasted peanuts and grated coconut. Mix well and cook for 2-3 minutes.

5.Remove the mixture from heat and let it cool.

6.Transfer the cooled mixture to a blender or food processor.

7.Add tamarind paste, salt, and a little water. Blend until you achieve a smooth and creamy consistency.

8.If needed, add more water to adjust the thickness of the chutney.

9.Transfer the chutney to a serving bowl.
