1.In a large pot, heat some oil over medium heat. Add the onion, garlic, ginger, lemongrass, star anise, and cinnamon stick. Sauté until fragrant.

3.Pour in the beef broth and coconut milk. Bring to a boil, then reduce heat and simmer for 1 hour.

4.Remove the lemongrass, star anise, and cinnamon stick from the broth.

5.Cook the rice noodles according to package instructions. Drain and set aside.

6.Season the broth with fish sauce, soy sauce, and brown sugar. Adjust the seasoning to taste.

7.To serve, divide the cooked rice noodles among bowls. Top with the beef slices and ladle the hot broth over them.
