Preparation

  1. 1.
Preheat the oven to 220°C (425°F).
  2. 2.
Toss the potato fries with vegetable oil, salt, and pepper. Spread them in a single layer on a baking sheet and bake for 25-30 minutes until golden and crispy.
  3. 3.
In a saucepan, heat some vegetable oil and sauté the onion and garlic until translucent.
  4. 4.
Add the flour and cook for a minute, stirring constantly.
  5. 5.
Gradually whisk in the broth, soy sauce, Worcestershire sauce, grated ginger, turmeric, and paprika. Bring the mixture to a simmer and cook until the gravy thickens.
  6. 6.
In a separate bowl, combine the grated coconut and tangy tropical cheese.
  7. 7.

  8. 8.
Serve immediately while the fries are still hot and the cheese is slightly melted.

Treat your ingredients with care...

  • Grated coconut — Make sure to use unsweetened grated coconut for a more authentic flavor and texture.
  • Tangy tropical cheese — If you can't find tangy tropical cheese, you can substitute it with a combination of sharp cheddar and a squeeze of lime juice for a tangy kick.

Tips & Tricks

  • For extra crispiness, soak the potato fries in cold water for 30 minutes before baking.
  • Experiment with different local spices and herbs to customize the flavor of the gravy to your liking.
  • Add a sprinkle of chopped fresh herbs, such as cilantro or parsley, on top for a burst of freshness.
