Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until translucent.

2.Add the minced garlic and grated ginger to the pot and sauté for another minute.

3.Add the diced tomatoes and cook until they start to soften.

4.Stir in the ground cumin, ground coriander, turmeric powder, chili powder, cinnamon stick, and bay leaves. Cook for a minute to toast the spices.

5.Add the pork pieces to the pot and brown them on all sides.

6.Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the pork is tender.
