Preparation

1.In a large pan, heat some oil over medium heat. Add the minced beef or diced steak and cook until browned. Remove from the pan and set aside.

2.In the same pan, add the chopped onion, garlic, carrot, and celery. Cook until softened.

3.Return the cooked meat to the pan and stir in the tomato paste, beef stock, Worcestershire sauce, dried thyme, salt, and pepper. Simmer for 20-30 minutes until the flavors meld together and the sauce thickens. Remove from heat and let it cool.

4.In a mixing bowl, combine the flour and salt for the pastry. Add the cold cubed butter and rub it into the flour until the mixture resembles breadcrumbs.

5.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

6.Preheat the oven to 200°C (400°F).

7.Roll out the pastry on a lightly floured surface to a thickness of about 3mm (1/8 inch). Cut out circles slightly larger than the diameter of the barm cakes.

8.Place a spoonful of the cooled meat filling onto the center of each pastry circle. Fold the pastry over the filling and seal the edges by pressing with a fork.

9.Place the pies on a baking sheet lined with parchment paper and bake for 20-25 minutes until the pastry is golden brown and crisp.

10.While the pies are baking, lightly toast the barm cakes.

11.Once the pies are ready, carefully slice each barm cake in half and place a pie inside. Serve warm.
