Preparation

1.Preheat the oven to 350°F (180°C). Grease and flour a 9-inch (23cm) square baking pan.

2.In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, allspice, cloves, nutmeg, and salt.

3.In a separate large bowl, whisk together the vegetable oil, brown sugar, molasses, honey, and eggs until well combined.

4.Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee, cocoa powder, and milk. Mix until just combined.

5.Pour the batter into the prepared baking pan and smooth the top with a spatula.

6.Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

7.Remove from the oven and let the piernik cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
