Preparation

1.In a large mixing bowl, combine the flour and salt. Gradually add the warm water and vegetable oil, mixing until a dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. Cover with a clean kitchen towel and let it rest for 30 minutes.

3.In a separate bowl, mix together the diced green chiles, shredded Monterey Jack cheese, cooked black beans, ground cumin, chili powder, garlic powder, salt, and pepper.

4.Roll out the dough on a floured surface until it is about 1/8 inch thick. Use a round cookie cutter or a glass to cut out circles of dough.

5.Place a spoonful of the green chile filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges together to seal.

6.Bring a large pot of salted water to a boil. Carefully drop the pierogi into the boiling water and cook for about 5 minutes, or until they float to the surface.

7.Remove the cooked pierogi from the water using a slotted spoon and transfer them to a plate.

8.Serve the New Mexican Pierogi hot, topped with sour cream and chopped cilantro.
