1.In a large mixing bowl, combine the all-purpose flour and salt for the dumpling wrappers. Gradually add warm water while stirring until a dough forms. Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

3.In a separate bowl, combine the chopped cabbage, carrots, mushrooms, ground pork or shrimp, minced garlic, soy sauce, sesame oil, grated ginger, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

5.On a lightly floured surface, roll out the dough into a thin sheet. Use a round cookie cutter or a glass to cut out circles from the dough.

7.Place a spoonful of the filling mixture onto each dough circle. Fold the circle in half and pinch the edges together to seal the dumpling. Repeat with the remaining dough and filling.

9.Bring a large pot of water to a boil. Carefully drop the dumplings into the boiling water and cook for about 5-6 minutes, or until they float to the surface. Remove the dumplings with a slotted spoon and set aside.
