Treat your ingredients with care...
- Chicken — For a more tender result, slice the chicken against the grain. This will ensure the meat remains juicy and tender after cooking.
- Chili bean paste — Adjust the amount of chili bean paste according to your spice preference. Increase or decrease the quantity to suit your taste buds.
- Snow peas — To retain their vibrant green color and crispness, blanch the snow peas in boiling water for 1 minute before adding them to the stir-fry.
Tips & Tricks
- For a vegetarian version, substitute the chicken with tofu or seitan.
- Customize the vegetables according to your preference. Bok choy, mushrooms, or water chestnuts make great additions.
- Add a splash of Chinese black vinegar for an extra tangy flavor.
- Serve with steamed jasmine rice or noodles for a complete meal.
- Make a double batch of the sauce and store it in the refrigerator for future use.
