Preparation

  1. 1.
In a large bowl, combine the minced garlic, grated ginger, cayenne pepper, paprika, ground coriander, ground cumin, salt, and black pepper to make a marinade.
  2. 2.
Add the chicken thighs to the marinade and coat them well. Let the chicken marinate for at least 30 minutes, or refrigerate overnight for maximum flavor.
  3. 3.
Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
  4. 4.
Add the marinated chicken thighs to the skillet and cook until browned on all sides, about 5 minutes per side.
  5. 5.
Remove the chicken from the skillet and set aside.
  6. 6.
In the same skillet, add the chopped tomatoes and cook until they start to soften.
  7. 7.
Stir in the peanut butter and chicken broth, mixing well until the peanut butter is fully incorporated.
  8. 8.
Add the chopped spinach to the skillet and cook until wilted.
  9. 9.
Return the chicken thighs to the skillet, nestling them into the spinach sauce.
  10. 10.
Reduce the heat to low, cover the skillet, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  11. 11.
Serve the Poulet Fafa hot, garnished with fresh cilantro. Enjoy with steamed rice or fufu.

Treat your ingredients with care...
