Preparation

1.Heat the olive oil in a large pot over medium heat.

2.Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent.

3.Add the diced red and green bell peppers to the pot. Cook for 5 minutes, until they start to soften.

4.Stir in the diced tomatoes, paprika, cumin, thyme, oregano, salt, black pepper, and cayenne pepper (if using). Cook for another 2 minutes to allow the flavors to meld.

5.Add the chicken pieces to the pot and coat them with the spice mixture.

6.Pour in the chicken broth and bring the mixture to a simmer. Cover the pot and let it cook for 30-40 minutes, or until the chicken is cooked through and tender.

7.Once the chicken is cooked, remove it from the pot and set it aside.

8.Increase the heat to medium-high and let the sauce simmer for an additional 10 minutes to thicken.

9.Return the chicken to the pot and cook for another 5 minutes to allow the flavors to meld.
