Preparation

1.In a bowl, combine the chicken pieces, soy sauce, lemon juice, and Togolese spice blend. Mix well and let it marinate for at least 30 minutes.

2.Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

3.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

4.Add the minced garlic, grated ginger, and cayenne pepper to the pot. Cook for another minute until fragrant.

5.Add the marinated chicken to the pot and cook until browned on all sides.

6.Add the basmati rice to the pot and stir well to coat the rice with the flavors.

7.Pour in the chicken broth and season with salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

8.Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
