1.In a large pot, heat some oil over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken from the pot and set aside.

2.In the same pot, add the onion, garlic, tomatillos, poblano peppers, and jalapeno peppers. Sauté until the vegetables are softened.

3.Return the chicken to the pot and add the hominy, chicken broth, cilantro, oregano, and cumin. Season with salt and pepper.

4.Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.

5.Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and simmer for an additional 10 minutes.
