Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown it on all sides. Remove the meat from the pot and set it aside.

2.In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the allspice, dried thyme, and minced Scotch bonnet pepper to the pot. Stir well to coat the onions and garlic with the spices.

4.Return the browned beef stew meat to the pot and pour in the beef broth and coconut milk. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, or until the meat is tender.

5.Add the sliced plantains, cubed yams, sliced carrots, and diced tomatoes to the pot. Season with salt and pepper to taste. Simmer for an additional 30 minutes, or until the vegetables are cooked through.
