Preparation

    In a large pot, heat some olive oil over medium heat. Add the beef stew meat and chicken thighs, and cook until browned on all sides. Remove from the pot and set aside.

    In the same pot, add the chorizo sausage and cook until slightly crispy. Remove from the pot and set aside.

    Add the onion and garlic to the pot and sauté until translucent.

    Return the beef stew meat and chicken thighs to the pot. Add the potatoes, carrots, sweet potato, garbanzo beans, green beans, cabbage, bay leaves, and smoked paprika. Season with salt and pepper.

    Pour enough water to cover all the ingredients. Bring to a boil, then reduce the heat to low and simmer for about 1.5 to 2 hours, or until the meats are tender and the flavors have melded together.

    Remove the bay leaves and adjust the seasoning if needed.

    Serve the Puchero hot, garnished with fresh parsley.
