Preparation

    Cut off the tops of the zucchinis and hollow them out using a spoon, leaving about 1/4 inch thick shells. Reserve the scooped-out flesh.

    In a large bowl, combine the ground meat, rice, onion, garlic, parsley, mint, cumin, coriander, sumac, salt, and pepper. Mix well.

    Stuff each zucchini with the meat and rice mixture, pressing it firmly.
