1.In a large bowl, combine the ground pork, lemongrass, shallots, garlic, galangal, kaffir lime leaves, red chili peppers, fish sauce, soy sauce, sugar, and white pepper. Mix well until all the ingredients are evenly incorporated.

2.Take a sausage casing and rinse it under cold water. Using a sausage stuffer or a piping bag, fill the casing with the pork mixture, leaving some space at the ends for tying.

3.Twist the filled casing at regular intervals to create individual sausages. Repeat the process until all the mixture is used.

4.Preheat a grill or a pan over medium heat. Cook the sausages for about 10-12 minutes, turning occasionally, until they are cooked through and have a slightly charred exterior.
