Preparation

  1. 1.
Crush the digestive biscuits into small pieces using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin.
  2. 2.
In a large mixing bowl, combine the crushed biscuits, chopped dark chocolate, softened butter, granulated sugar, cocoa powder, mixed nuts, and vanilla extract. Mix well until all the ingredients are evenly incorporated.
  3. 3.
Place the mixture onto a sheet of parchment paper and shape it into a log, approximately 25cm (10 inches) long and 5cm (2 inches) in diameter.
  4. 4.
Roll the log tightly in the parchment paper, twisting the ends to secure it. Refrigerate for at least 2 hours, or until firm.
  5. 5.
Once chilled and firm, remove the Salame Turco from the refrigerator and unwrap it from the parchment paper. Dust the log with powdered sugar, ensuring it is evenly coated.
  6. 6.
Slice the Salame Turco into thin rounds and serve as a delightful dessert or snack.

Treat your ingredients with care...

  • Dark chocolate — Use high-quality dark chocolate with a cocoa content of at least 70% for the best flavor and texture.
  • Mixed nuts — Feel free to customize the nut combination according to your preference. You can also lightly toast the nuts before adding them to the mixture for an extra depth of flavor.

Tips & Tricks

  • For a more intense chocolate flavor, add a tablespoon of espresso or strong coffee to the mixture.
  • If you prefer a sweeter dessert, you can increase the amount of sugar according to your taste.
  • Experiment with different types of biscuits, such as graham crackers or shortbread, to vary the flavor and texture of the Salame Turco.
  • To make the slicing process easier, dip a sharp knife in hot water before cutting through the chilled log.
  • Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Serving advice

Serve the sliced Salame Turco on a platter or individual dessert plates. Dust each slice with an additional sprinkle of powdered sugar for an elegant presentation. Pair it with a cup of freshly brewed coffee or a glass of dessert wine for a delightful combination.

Presentation advice

To enhance the presentation, you can garnish the serving platter with fresh mint leaves or a drizzle of chocolate sauce. Arrange the slices in a circular pattern to resemble a salami wheel. This will add a touch of elegance and make it visually appealing.
