Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown.

2.Add the minced garlic and grated ginger to the pot and sauté for another minute.

3.Add the diced tomatoes and tomato paste to the pot and cook until the tomatoes are soft and pulpy.

4.In a small bowl, mix together the ground turmeric, cumin, coriander, and cardamom. Add this spice mixture to the pot and stir well to combine.

5.Add the lamb or chicken pieces to the pot and cook until they are browned on all sides.

6.Pour in the coconut milk and add the cinnamon stick and saffron threads. Stir well to combine.

7.Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the meat is tender and the flavors have melded together.
