Preparation

1.In a large saucepan, bring the chicken or vegetable broth to a simmer. Add the saffron threads and let them infuse for 5 minutes.
-
2.In a separate pan, heat some vegetable oil over medium heat. Add the Arborio rice and toast it for a few minutes until it becomes translucent.
-
3.Gradually add the saffron-infused broth to the rice, one ladle at a time, stirring constantly. Allow the rice to absorb the broth before adding more. Continue this process until the rice is cooked al dente.
-
4.Remove the rice from heat and let it cool slightly. Stir in the ground cardamom, ground cinnamon, grated Parmesan cheese, and chopped parsley. Season with salt and pepper to taste.
-
5.Once the rice mixture has cooled, shape it into small balls, approximately the size of golf balls.
-
6.Dip each rice ball into the beaten eggs, then roll it in breadcrumbs until fully coated.
-
7.Heat vegetable oil in a deep pan or fryer to 180°C (350°F). Fry the rice balls in batches until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel-lined plate.
-
8.Serve the Bahraini-inspired Anicini warm as an appetizer or a main course. Enjoy the fusion of flavors!
Treat your ingredients with care...
- Saffron — To enhance the flavor and aroma of saffron, soak the threads in a tablespoon of warm water for a few minutes before adding them to the broth.
- Arborio rice — Make sure to use Arborio rice or any other short-grain rice variety to achieve the desired creamy texture in the rice balls.
Tips & Tricks
- For a more pronounced Bahraini flavor, you can add a pinch of ground cloves or nutmeg to the rice mixture.
- If you prefer a spicier version, you can add a dash of cayenne pepper to the breadcrumbs before coating the rice balls.
- To make the dish more visually appealing, garnish the Anicini with a sprinkle of saffron threads or chopped parsley before serving.
- If you don't have Arborio rice, you can substitute it with other short-grain rice varieties such as Carnaroli or Vialone Nano.
- To make the recipe vegan, omit the Parmesan cheese and use a plant-based alternative or nutritional yeast for a cheesy flavor.
