1.In a large saucepan, bring the chicken or vegetable broth to a simmer. Add the saffron threads and let them infuse for 5 minutes.

2.In a separate pan, heat some vegetable oil over medium heat. Add the Arborio rice and toast it for a few minutes until it becomes translucent.

3.Gradually add the saffron-infused broth to the rice, one ladle at a time, stirring constantly. Allow the rice to absorb the broth before adding more. Continue this process until the rice is cooked al dente.

4.Remove the rice from heat and let it cool slightly. Stir in the ground cardamom, ground cinnamon, grated Parmesan cheese, and chopped parsley. Season with salt and pepper to taste.

5.Once the rice mixture has cooled, shape it into small balls, approximately the size of golf balls.

6.Dip each rice ball into the beaten eggs, then roll it in breadcrumbs until fully coated.

7.Heat vegetable oil in a deep pan or fryer to 180°C (350°F). Fry the rice balls in batches until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel-lined plate.
