Preparation

1.In a mixing bowl, combine the glutinous rice flour, coconut milk, sugar, and water. Mix well until the sugar is dissolved and the batter is smooth.

2.Divide the batter into three equal parts. Leave one part as is, mix the second part with the mashed purple yam, and mix the third part with the finely chopped jackfruit.

3.Grease a round baking dish or steamer tray with oil or line it with banana leaves for an authentic touch.

4.Pour the plain batter into the prepared dish and steam for 10 minutes or until set.

5.Once the first layer is set, pour the purple yam batter on top and steam for another 10 minutes.

6.Finally, pour the jackfruit batter on top and steam for an additional 10 minutes or until all layers are set.

7.Remove from the steamer and let it cool completely. Once cooled, refrigerate for at least 2 hours to firm up.

8.Once chilled, slice the Sapin-sapin into squares or diamond shapes.

9.Serve the Sapin-sapin on a platter and garnish with grated coconut.
