1.Heat the vegetable oil in a large pan over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant.

3.Stir in the shrimp paste, vinegar, brown sugar, and water. Season with salt and pepper to taste.

4.Reduce the heat to low, cover the pan, and simmer for about 1 hour or until the pork is tender.

5.While the pork is simmering, prepare the mango salsa. In a bowl, combine the diced mangoes, tomato, red onion, cilantro, and lime juice. Mix well and set aside.

6.Once the pork is tender, remove the lid and continue cooking for another 10-15 minutes to allow the sauce to thicken.
