Preparation

1.In a large mixing bowl, combine the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

3.In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

4.Add the ground beef and ground pork to the skillet, breaking it up with a spoon. Cook until the meat is browned and cooked through.

5.Stir in the dried oregano, dried basil, red pepper flakes, tomato sauce, grated Parmesan cheese, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat and let the filling cool.

7.On a lightly floured surface, roll out the chilled dough into a large circle, about 1/8 inch thick.

8.Spoon the cooled filling onto one half of the dough circle, leaving a small border around the edges.

9.Fold the other half of the dough over the filling and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

10.Transfer the Schiz Impanato to a baking sheet lined with parchment paper. Brush the top with the beaten egg wash.
