Ingredients
In this adaptation, we have replaced the traditional Italian ingredients of Sfogi in saor with Mariana Islands-inspired flavors. Instead of using white wine vinegar, we use coconut vinegar to add a tropical twist. The addition of ginger and coconut vinegar sauce further enhances the dish's flavor profile, giving it a unique Mariana Islands touch. Preparation

1.In a bowl, combine coconut vinegar, minced garlic, grated ginger, turmeric powder, paprika, salt, and black pepper.

2.Place the fish fillets in a shallow dish and pour the marinade over them. Make sure the fish is well coated. Cover the dish and refrigerate for at least 1 hour, allowing the flavors to meld.

3.Heat vegetable oil in a large skillet over medium heat. Remove the fish from the marinade, reserving the marinade for later use.

4.Cook the fish fillets in the skillet for about 3-4 minutes on each side, or until they are cooked through and lightly browned. Remove the fish from the skillet and set aside.

5.In the same skillet, pour the reserved marinade and bring it to a simmer. Cook for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

6.Place the cooked fish fillets on a serving platter and pour the coconut vinegar sauce over them. Garnish with fresh herbs.
