1.In a bowl, mix together the ground mustard seeds, green chilies, turmeric powder, yogurt, and salt to form a smooth paste.

2.Marinate the hilsa fish fillets with the prepared mustard paste, ensuring they are well coated. Let it marinate for 30 minutes.

3.Heat mustard oil in a pan over medium heat. Add the marinated fish fillets and fry them until golden brown on both sides. Remove the fish from the pan and set aside.

4.In the same pan, add the remaining mustard paste and cook for a minute.

5.Add water to the pan and bring it to a simmer. Place the fried fish fillets back into the pan and cook for another 5-7 minutes, allowing the flavors to meld together.
