Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant.

2.Add the beef chunks to the pot and cook until browned on all sides.

3.Add the chili paste or fresh chili peppers, lemongrass, galangal, and kaffir lime leaves to the pot. Stir well to combine.

4.Pour in the beef broth and coconut milk. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the beef is tender.

5.Add the diced potatoes and tomatoes to the pot. Continue simmering for another 15-20 minutes, or until the potatoes are cooked through.

6.Stir in the tamarind paste and sweet soy sauce. Season with salt and pepper to taste.

7.Remove the lemongrass, galangal, and kaffir lime leaves from the pot.
