Ingredients
In this Macedonian adaptation of Stjerneskud, we incorporate the flavors and ingredients commonly found in Macedonian cuisine. The original Danish dish is typically served with rye bread, but we substitute it with crusty Mediterranean bread to enhance the Mediterranean flavors. Additionally, we use marinated anchovies instead of pickled herring to add a distinct Macedonian touch. The dressing is also modified to include traditional Macedonian herbs and olive oil, giving it a unique Mediterranean twist. We alse have the original recipe for Stjerneskud, so you can check it out.

- Shrimp — Make sure to remove the shells and devein the shrimp before grilling.
- Calamari — To achieve tender calamari, grill it quickly over high heat or cook it for a shorter time to prevent it from becoming tough.
- Marinated anchovies — If you can't find marinated anchovies, you can marinate them yourself by combining anchovies with olive oil, lemon juice, and herbs.
Tips & Tricks
- For added flavor, brush the bread with olive oil and lightly toast it on the grill before assembling the dish.
- Customize the dressing by adding minced garlic or a pinch of chili flakes for a spicy kick.
- Feel free to add other Mediterranean ingredients such as olives or roasted red peppers to enhance the flavors.
- If you prefer a lighter version, you can serve the seafood and vegetables on a bed of mixed greens instead of bread.
- Experiment with different herbs such as basil or parsley to create your own twist on the dressing.
