Treat your ingredients with care...

  • Plantains — Choose ripe plantains with yellow skin for a sweeter flavor. Green plantains can be used for a more savory taste.
  • Scotch bonnet pepper — Adjust the amount of minced pepper according to your desired level of spiciness. Be cautious as Scotch bonnet peppers are very hot. Use gloves when handling them.

Tips & Tricks

  • For a milder version, remove the seeds from the Scotch bonnet pepper before mincing.
  • If you prefer a thicker stew, you can add a slurry of cornstarch and water during the last 15 minutes of cooking.
  • Leftovers can be refrigerated and reheated the next day, allowing the flavors to further develop.
