In the original Norwegian dish, Svinestek med frukt, the pork is typically roasted with apples and prunes. However, in this adapted East Timorese version, we replace the apples and prunes with tropical fruits such as pineapple, mango, and papaya to infuse the dish with the flavors of the region. 1.Preheat the oven to 180°C (350°F).

2.In a small bowl, combine the ginger paste, minced garlic, lime juice, brown sugar, salt, and black pepper to make the marinade.

3.Rub the marinade all over the pork roast, ensuring it is evenly coated.

4.Place the pork roast in a roasting pan and roast in the preheated oven for approximately 2 hours, or until the internal temperature reaches 70°C (160°F).

5.Remove the pork roast from the oven and let it rest for 10 minutes before slicing.

6.While the pork is resting, arrange the sliced pineapple, mangoes, and papaya on a serving platter.

7.Slice the roasted pork and arrange it on top of the tropical fruits.
