Preparation

1.Heat a large pot of salted water and cook the tagliatelle according to the package instructions until al dente. Drain and set aside.

2.In a separate large pan, heat some olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened.

3.Add the ground beef to the pan and cook until browned, breaking it up with a wooden spoon.

4.Pour in the red wine and let it simmer for a few minutes until it reduces slightly.

5.Add the crushed tomatoes, bay leaf, dried oregano, dried thyme, and paprika to the pan. Season with salt and pepper to taste.

6.Reduce the heat to low and let the sauce simmer for at least 1 hour, stirring occasionally to prevent sticking.
