Preparation

  1. 1.
In a large bowl, combine the soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Mix well.
  2. 2.
Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 1 hour, or overnight for best results.
  3. 3.
Heat the cooking oil in a large pan over medium heat. Remove the chicken from the marinade, reserving the marinade for later use.
  4. 4.
Sear the chicken pieces in the hot oil until browned on all sides. Remove the chicken from the pan and set aside.
  5. 5.
In the same pan, pour in the reserved marinade and bring it to a boil. Reduce the heat to low and simmer for 10 minutes.
  6. 6.
Add the seared chicken back into the pan, along with the pineapple chunks. Cover and simmer for 30-40 minutes, or until the chicken is tender and cooked through.
  7. 7.
Season with salt to taste. Serve hot with steamed rice.

Treat your ingredients with care...

  • Chicken — Make sure to use bone-in chicken pieces for this recipe as they add more flavor to the dish.
  • Pineapple — If fresh pineapple is not available, you can use canned pineapple chunks. Just make sure to drain them before adding to the dish to avoid excess liquid.

Tips & Tricks

  • For an extra layer of flavor, you can add a splash of pineapple juice to the marinade.
  • If you prefer a spicier dish, you can add a chopped chili pepper to the marinade.
  • To achieve a more caramelized and flavorful chicken, you can broil the chicken pieces for a few minutes after simmering.
