Preparation

1.In a large bowl, combine the soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Mix well.

2.Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 1 hour, or overnight for best results.

3.Heat the cooking oil in a large pan over medium heat. Remove the chicken from the marinade, reserving the marinade for later use.

4.Sear the chicken pieces in the hot oil until browned on all sides. Remove the chicken from the pan and set aside.

5.In the same pan, pour in the reserved marinade and bring it to a boil. Reduce the heat to low and simmer for 10 minutes.

6.Add the seared chicken back into the pan, along with the pineapple chunks. Cover and simmer for 30-40 minutes, or until the chicken is tender and cooked through.
