Preparation

  1. 1.
In a bowl, whisk together the eggs, mirin, soy sauce, sugar, and wasabi paste until well combined.
  2. 2.
Heat a non-stick frying pan over medium heat and lightly grease with oil or butter.
  3. 3.
Pour a quarter of the egg mixture into the pan and swirl it around to create a thin layer.
  4. 4.
Once the edges of the omelette start to set, gently roll it up from one side to the other, creating a log shape.
  5. 5.
Push the rolled omelette to one side of the pan and repeat the process with another quarter of the egg mixture.
  6. 6.
Continue rolling and cooking the omelette until all the egg mixture is used.
  7. 7.
Remove the omelette from the pan and let it cool slightly before slicing it into thin strips.
  8. 8.
To assemble the sandwich, spread butter on one side of each bread slice.
  9. 9.
Place the tamagoyaki strips evenly on four slices of bread and top with the remaining slices.
  10. 10.
Cut the sandwiches into desired shapes, such as triangles or rectangles.
  11. 11.
Serve the Tamago Sando immediately or wrap it tightly in plastic wrap for later enjoyment.

Treat your ingredients with care...

  • Eggs — Use fresh eggs for the best results. Room temperature eggs are easier to whisk and incorporate into the mixture.
  • Wasabi paste — Adjust the amount of wasabi according to your preference for spiciness. Add more or less to suit your taste.
  • Soft white bread — Look for bread that is soft and fluffy, as it will provide the best texture for the sandwich.

Tips & Tricks

  • For a twist, add thinly sliced cucumber or pickled radish to the sandwich for extra crunch and freshness.
  • Experiment with different types of bread, such as milk bread or brioche, to add a touch of richness to the sandwich.
  • If you prefer a milder flavor, reduce the amount of soy sauce in the tamagoyaki mixture.
  • To make the tamagoyaki more visually appealing, use a rectangular frying pan to create a perfect shape.

Serving advice

Serve the Tamago Sando as a standalone dish or pair it with a side salad for a complete meal. It is best enjoyed fresh, but can also be packed for picnics or lunchboxes.

Presentation advice

To enhance the presentation, trim the crusts off the bread slices and cut the sandwiches into elegant shapes. Arrange them neatly on a platter or bento box for a visually pleasing display.
