Ingredients
In this adaptation of the original Japanese tempura, we incorporate the flavors and ingredients of Jiangsu cuisine. The batter is made with a combination of rice flour and cornstarch, which gives it a lighter and crispier texture compared to the traditional tempura batter. The vegetables used are also specific to Jiangsu cuisine, such as mushrooms, bell peppers, green beans, and sweet potatoes. 2.Gradually add the ice-cold water to the dry ingredients, whisking until the batter is smooth and free of lumps.

3.Heat vegetable oil in a deep pan or pot to 180°C (350°F).

4.Dip the vegetable slices into the batter, allowing any excess batter to drip off.

5.Carefully place the coated vegetables into the hot oil and fry until golden brown and crispy. Fry in batches to avoid overcrowding the pan.

6.Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

7.In a small bowl, mix together the soy sauce, rice vinegar, grated ginger, and honey or sugar (if using) to make the dipping sauce.
